- 1 cup Chinese broccoli (gai lan), sliced

**For the Noodles:**

- Fresh wide rice noodles (sen yai) - homemade or store-bought

1. **Make the Sauce:**

Combine oyster sauce, soy sauce, fish sauce, Thai black soy sauce, and Golden Mountain sauce in a bowl. Set aside.


2. **Prepare the Protein:**

In a bowl, mix the chicken with a splash of soy sauce, a touch of sugar for browning, and a little water to keep it juicy. Let it marinate while prep work continues.


3. **Chop the Vegetables:**

Start by removing tough stems from the Chinese broccoli. Thinly slice the stems diagonally and chop the leaves roughly.


4. **Prepare the Noodles:**
